One of our favorite sours has to be the Pisco Sour. This cocktail is a classic example of perfect flavor combination: The spicy taste of Pisco combined with fresh lime juice and creamy protein.


While the Pisco Sour enjoys unprecedented popularity in South America, this cocktail is unique on a drink menu in Europe, and certainly in the Netherlands. Although Peruvian food is on the rise in the Netherlands, the drinks are still lagging behind. And that while a Pisco Sour

the perfect drink is with a ceviche!


Pisco is grape distillate that probably originated in Péru. Chileans also claim cultural ownership of the drink. A sensitive point that leads to an endless discussion. The Pisco we use is a Peruvian Pisco, so that's the side we chose.


Our Pisco Sour:

50 ml Pisco Demonio de los Andes

35 ml lime juice

15 ml sugar syrup

35 ml protein

ice cubes

Angostura Bitters


We use Pisco Demonio de los Andes, a pisco made with grapes from the southern Tacama vineyard. This pisco does not come (as the name suggests) from the Andes Mountains. The distiller of the Pisco decided to use the name of one of the most lively and tumultuous figures of the conquest of Peru, whose bravado can be compared to that of the drink in the bottle: Don Francisco de Carvajal, infamous for his wickedness and cruelty towards friend and foe, and for his special kind of cynicism and sense of humor. The fear he instilled earned him the nickname "Demonio de los Andes". The firmness and spiciness of this Pisco makes it perfect for a delicious Pisco Sour. The strong taste can compete with the acidity of this cocktail.


Time to Shake!

Pour the pisco, lime juice, sugar syrup and egg white into a cocktail shaker and shake vigorously. What you want is a nice foam layer on your sour, the best result is achieved by shaking sideways for at least 20 seconds. Then add the ice and shake gently cold. Pour directly into a tumbler (over ice) or coupe (glazed) and add a few drops of angostura to the foam layer.

There are many options for garnish. We like to use a lime wedge to bring up the acidity, but if you like it more spicy you can also finish it with a dried orange wedge or even a cinnamon stick.
