In my kitchen, vegetables are the centerpiece of any festive table. And preferably when they are at their best: each in its season. I love tubers in the craziest shapes, bright purple cauliflowers or the scent of citrus on a cold winter day. In addition to all that beauty, I think it is important to consider the ecological footprint that our food pattern demands. That is why as a young chef I strive to cook as sustainably, locally and waste-free as possible.
